Bacon is one of life’s special treats. My kids would eat just bacon for breakfast every day if they could! Of course, I don’t let them, but I do try to add bacon into healthy dishes to make them more appealing to the kid palate. There’s something magical about the combination of bacon, onion, cilantro, and avocado in this salad that makes it incredibly satisfying. It has been a family favorite of ours for years!
Chicken Avocado Salad
4 cups lettuce
4 chicken breasts, cooked and cut into 1” cubes
¼ cup white onion, diced
¼ cup cilantro, chopped
4 oz bacon, cooked and crumbled
4 large avocados, cubed
½ cup Satisfying Salad Dressing (https://www.eatmyscience.com/satisfying-salad-dressing-recipe/) or balsamic vinegar dressing of choice
Add all ingredients to a large bowl.
Toss with dressing and enjoy!
