How to Wow Your Family with This Creole Jambalaya

My family loves dinner with a hearty flavor. Spices are my best friend in the kitchen, helping me jazz up our dinners and avoid ruts in flavor or ingredients. As an added bonus, creating delicious tastes with spices allows me to use healthier ingredients without my kids even knowing!

In this Jambalaya recipe, I sneak in long-grain brown rice, which packs much more nourishment than its white or quick-cooking counterparts. The flavor is divine, and the nutrition is elevated. But at altitude, finding the right cooking time for rice can be difficult. You must leave at least an hour to cook the rice in this recipe. Chicken and Sausage Creole Jambalaya

Ingredients:

8 ounces chicken, diced

12 oz andouille sausage, sliced

2 Tbsp. olive oil

1/2 cup chopped onion

1/2 cup chopped green bell pepper

1/2 cup chopped celery

2 cloves minced garlic

1/2 cup chopped tomatoes

3 bay leaves

1 Tbsp. Creole seasoning

3/4 cup long-grain brown rice

3 1/2 cups chicken stock

salt and pepper

Directions:

In a large saucepan or pot, heat oil over high heat. Add onion, pepper, and celery, stirring occasionally until slightly tender, about 5 minutes. Add garlic, tomatoes, bay leaves, and creole seasoning. Stir for an additional 2 minutes to blend flavors. Stir in rice and broth. Bring to a boil, then reduce heat to medium, cover, and cook until rice absorbs liquid and becomes tender, stirring rarely, about 1 hour to 1 hour 10 minutes.

While rice is cooking, prepare chicken and andouille sausage. If pre-cooked, set aside to add to rice. To cook, heat 1 Tbsp oil in a pan, and add diced chicken and sliced sausage. Heat, stirring, until cooked through, about 10 minutes.

When rice is just tender, remove bay leaves then add sausage and chicken. Cook until heated through, about 5 minutes more.

Season to taste with salt, pepper, and Creole seasoning to taste.
