Summer Berry Syrup for Ice Cream

I shop often at Costco, where I tend to buy berries in these big containers. Sometimes I buy more than we eat, so the question is, what to do with them?  How about berry syrup? I came up with this idea recently and it’s a delightful taste of summer.

Ingredients

1 cup berries (I used what I had in the house: blackberries and blueberries, any will do)

1 cup water

1 cup sugar

1 tablespoon corn starch

Directions

Add all ingredients in saucepan, heat over medium heat. I cooked this for about 20 to 30 minutes.

My family loved it — we poured it over homemade buttermilk pancakes. 

After dinner we put drizzled the syrup over vanilla ice cream.
