For quick and easy chicken tacos or burritos, this recipe works really well. If you have leftover chicken, it’s something anyone can put together for a tasty lunch or dinner.
5 to 6 cups cooked chicken, shredded
1 can black beans, drained
1 can corn, undrained
2 cans rotel tomatoes or 1 jar salsa
Cumin to taste
One package taco seasoning, more if you like
Place all ingredients into sauce pan, simmer for one hour.
Serve in crispy taco shell or tortilla. Top with guacamole, sour cream, lettuce, pico de gallo, and cheese.
