Many families are outdoors all day during the summer, and who wants to spend time in the kitchen figuring out dinner? Prepare this meal in the late morning or noon and it’ll cook all day; your kitchen will smell great, and the meal will be ready by dinner time. It’s a flavorful Spanish-tasting meal that’s a sure hit with friends and family.
Fiesta Chicken
Ingredients
4 chicken breasts
1 packet Spicy Ranch mix
1 can black beans, drained and rinsed
1 can Rotel ®
1 can corn, undrained
Crumbled goat cheese
Directions
In a crockpot, pour undrained corn and spread across the bottom. Mix in spicy ranch mix.
Place chicken breasts over the top of the corn mixture. Layer Rotel above that, and then another layer of drained and rinsed black beans over that.
Top with crumbled goat cheese.
Cook on low in slow cooker for six hours, or on high for four hours.
