We eat healthier with the kids by insisting they have a "rainbow" of foods on their plate and they can choose what foods they want to complete their rainbow. If they don't want to finish their green peas.... it's easier to say, well that is what your choice for the green in your rainbow so you need to eat them all!

We were just having this discussion at the dinner table last night. We have to try to get more veggies in our diet. The kids love them when we do, I just feel too busy / lazy to always have great veggies on hand for them. Unfortunately processed food is quicker. I need help!!

awesome giveaway.

We keep trying to get our kids to eat as healthy as we do - we talk about "eating a rainbow" and what vitamins and minerals foods contain. Also, my girls godmother can introduce anything and my kids will eat it -- coconut ice cream last week. I think I'm going to hire her.

I love to grill, so the best way for me to keep the family eating veggies and me with my tongs in front of my favorite cooking surface is to get a grilling pan, cover it in tin foil and cook up some sliced peppers, onions, potatoes and garlic. The kids love to eat them raw and love them even more when they are grilled in spices. It's a win-win for everyone.

And I was trying to say "we're getting healthier by keeping fresh produce around and buying organic and local whenever we can" but I have this weird phenomena where my child shows up and needs something whenever I'm in the middle of typing anything. ;)

I love me some veggies too! We're pretty good about eating a lot of them, but trying to make healthier changes by actually switching to straight up organic. It's quite the process!

PS - Your recipe looks delish!
